This non-chemical method minimizes caffeine, making it even safer to consume. After the decaffeination process, the green beans are roasted with Center Coffee's unique roasting technique and packed into drip bags. Q1. Is there a reason you chose 'Market Kurly' as your online partner?
I use Market Kurly frequently. The ability to easily access rare ingredients is attractive, but what I liked most was the Dawn Delivery service, which delivers fresh products by 7 AM the next day if ordered by 11 PM the night before. I saw great merit in the fact that our store's coffee beans could be delivered fresh to consumers through Dawn Delivery.

Q2. What are the conditions for good coffee?
Taste is a personal preference, so it's hard to define exactly what good coffee is. I believe that good coffee is coffee where the consumer can know who made it, from the farmer to the roaster. Sometimes, you see coffee farms listed with their names, altitudes, and processing methods, but the farmer's name is missing. There are even cases where coffee from hundreds of farmers is mixed. Center Coffee deals directly with farms, so we can identify the farmers. Specialty coffee is coffee that you can enjoy knowing who produced it.

Q3. Do you personally travel around the world to source raw materials?
It's difficult to find good farms without visiting them directly. Farmers vary greatly; some only care about their own profit, while others are artisans who dedicate their entire lives to it. Businesspeople talk about the price per kilogram of coffee, but farmers who have devoted their lives to coffee tell stories about their coffee. They talk about why their coffee tastes different and how it's cultivated. When they speak, they are very bright-eyed and their gaze is different. Coffee made with such sincerity has a special taste. Working with sincere people – I believe this is the secret and know-how behind Center Coffee's flavor.

Q4. What do you think is the appeal of coffee?
The appeal of coffee is that no matter how similar two coffees are, if I roast them slightly differently or use a different brewing tool, the taste always turns out different. Even with the same coffee, each cup can have a different nuance, making it always new.

Q5. What is coffee to roaster Park Sang-ho?
Coffee is life itself. Through coffee, I've learned a lot about dining, wine, whiskey, and so on, and by meeting diverse people, I've been able to see and learn about countless lives and the values they pursue. Ultimately, these experiences led me to 'go all-in on coffee' for my life's direction.
On the surface, coffee seems very simple. But if you understand extraction, you see roasting; if you study roasting, there are green beans; and if you delve into green beans, there are so many countries, and so many places to visit that you might not be able to see them all in a lifetime. Coffee is something I'll never fully understand even if I dedicate the rest of my life to it, which is why it's so appealing and motivates me to challenge myself.

Q6. What are your future goals and dreams?
It's not about reaching 100 or 200 Center Coffee branches, but about maintaining the quality of our first branch in Seongsu-dong, no matter how many more branches we open. Even if profit margins are lower, we won't lose our initial commitment, and we'll uphold our pride in the quality of our raw materials, including green beans, to the very end.
And ultimately, I want many people to gain deeper knowledge about coffee. Even if coffee comes from the same country, its characteristics and taste vary greatly depending on the region where it's produced. I want people to say, "I like coffee from the Santa Felisa farm in the Acatenango region of Guatemala," rather than just "I like Guatemalan coffee." Like with wine. I hope Center Coffee can be a guide, introducing good coffee and helping people understand specifically what kind of coffee they want.

It's my work. (laughs) Center Coffee is a blank canvas. Diverse artworks are created depending on what colors are applied to it. I can draw what I want on this canvas. And I share these drawings with our customers. In this process, Center Coffee that is created is a 'masterpiece' that everyone creates 'together'.
