This new Icebreaker is made with green beans directly sourced from farms in Colombia and Brazil, delicately roasted by Park Sang-ho, a roaster and former UK Barista Champion. The unique characteristics of the green beans are well-preserved, and the balance is exceptional. Center Coffee is a specialty coffee shop that researches and strives for quality and service, aiming to provide taste and service that impresses not only Korea but the world. The delicious coffee you're drinking is made by harvesting, processing, drying, aging, roasting, and finally extracting seeds from coffee cherry trees. Coffees sourced directly from around the world are kept fresh in humidity and temperature-controlled warehouses, and then roasted with the unique expertise of Park Sang-ho, a former head roaster at Square Mile Coffee.

Center Coffee's first store in Seongsu-dong offers a complete respite for visitors with its warm natural light that brightens the heart, the green scenery outside the window, and a white space that promotes relaxation. With a fragrant cup of coffee, moments turn into stories, evoking small joys and emotions. Starting with the Seongsu-dong store, Center Coffee plans to expand with additional stores in Samseong-dong and other domestic locations, as well as venturing into overseas markets.

Q1. Why did you choose Market Kurly as your online partner?
I frequently use Market Kurly. The ability to easily access hard-to-find ingredients is attractive, but what I liked most was the샛별 delivery (dawn delivery) service, where if you order by 11 PM the night before, it's delivered fresh by 7 AM the next morning. I felt a great advantage in the possibility that consumers could receive our store's beans fresh through this dawn delivery.

Q2. What are the conditions for good coffee?
Taste is a matter of personal preference, so you can't define what makes a good coffee definitively. I believe that good coffee is coffee where the consumer can know who made it, from the farmer to the roaster. Sometimes, you see the coffee farm's name, altitude, and processing method, but the farmer's name is unknown. There are even cases where coffee from hundreds of farmers is mixed. Center Coffee deals directly with farms, allowing us to identify the farmers. Specialty coffee is coffee that you can enjoy knowing who produced it.

Q3. Do you travel around the world yourself to source raw ingredients?
It's difficult to find good farms without visiting them directly. Farmers vary widely; some prioritize only their own profit, while others are artisans who dedicate all their time and life to their craft. Businesspeople talk about the price per kilogram of coffee, but farmers who have dedicated their lives to coffee tell stories about their coffee. They talk about why their coffee tastes different and how it's cultivated. When they speak, they are very bright and their eyes are different. Coffee made with such sincerity also has a special taste. Working with sincere people is the secret to Center Coffee's taste and know-how.

Q4. What do you think is the charm of coffee?
What makes coffee charming is that even if it's the exact same coffee, if I roast it slightly differently or use a different brewing tool, the taste always comes out differently. Even the same coffee can have different nuances in each cup, which makes it always new.

Q5. What is coffee to Roaster Park Sang-ho?
Coffee is life itself. Through coffee, I've learned a lot about dining, wine, whiskey, and met diverse people, learning from countless lives and values they pursue. Ultimately, these experiences led me to 'go all in on coffee' as my life's direction.
On the surface, coffee seems very simple. But once you understand brewing, you see roasting, and when you study roasting, there are green beans, and if you delve into green beans, there are so many countries, and so many places to visit that you might never see them all in a lifetime. Coffee is something I'll never fully understand, even if I dedicate the rest of my life to it, and that's what makes it even more attractive and challenging.

Q6. What are your future goals and dreams?
It's not about reaching 100 or 200 Center Coffee stores; it's about maintaining the quality of our first store in Seongsu-dong, no matter how many more stores we open. Even if the profit margin is smaller, we will not lose sight of our initial commitment and will uphold our pride in the quality of raw ingredients, including green beans, to the very end.
Ultimately, I hope many people gain deeper knowledge about coffee. Even if coffees share the same nationality, their characteristics and tastes vary greatly depending on the region they're produced in. I want people to say, 'I like coffee from the Santa Felisa farm in the Acatenango region of Guatemala,' rather than 'I like Guatemalan coffee.' Like with wine. I hope Center Coffee can introduce good coffees from this perspective and guide people in discovering what kind of coffee they truly desire.

Q7. Lastly, what is Center Coffee to you?
It's my work. (laughs) Center Coffee is a blank canvas. Various masterpieces are created depending on what colors are applied to it. I can draw what I want on this canvas. And I share these drawings with our customers. In this process, Center Coffee, which is born, is a 'masterpiece' that everyone 'creates together'.
