I often use Market Kurly. Q2. What are the conditions for good coffee?
Taste is a personal preference, so you can't define exactly what good coffee is. I believe good coffee is coffee where consumers can know who made it, from the farmer to the roaster. Sometimes, you see coffee farms with names, altitudes, and processing methods listed, but you can't find the farmer's name. There are also cases where coffee from hundreds of farmers gets mixed. Since Center Coffee deals directly with farms, we can identify the farmers. Specialty coffee is coffee that you can enjoy knowing who produced it.
Q3. Do you personally travel around the world to source raw materials?
It's difficult to find good farms without visiting them in person. Farmers are also diverse; some only care about their own profit, while others are artisans who dedicate all their time and life to their craft. Businessmen talk about how much coffee costs per kilogram, but farmers who have dedicated their lives to coffee tell stories about their coffee. They talk about why our coffee tastes different and how it's cultivated. When they talk, they're very bright and their eyes are different. Coffee made with such sincerity also has a special taste. Working with sincere people – that's the secret to Center Coffee's taste and know-how.
Q4. What do you think is the charm of coffee?
The charm of coffee is that even if it's the exact same coffee, the taste always comes out differently if I roast it slightly differently or use a different brewing tool. Even the same coffee can have a different nuance in each cup, making it always new.
Q5. To roaster Sangho Park, what is coffee?
Coffee is life itself. Through coffee, I learned a lot about dining, wine, and whiskey, and by meeting various people, I was able to see and learn about countless lives and their values. Ultimately, through these experiences, I decided to "go all-in on coffee" for my life's direction.
On the surface, coffee seems very simple. But when you understand extraction, you see roasting, and when you study roasting, there are green beans, and when you delve into green beans, there are so many countries, and so many places to visit that you might never visit them all in a lifetime. Coffee is something I will never fully know even if I dedicate the rest of my life to it, which is why it's even more attractive and inspires me to take on challenges.
Q6. What are your future goals and dreams?
It's not about reaching 100 or 200 Center Coffee branches. Regardless of how many more branches we open, we will maintain the quality of our first branch in Seongsu-dong. Even if the profit margin is lower, we will not lose our initial vision and will continue to uphold our pride in the quality of our raw materials, including green beans, until the very end.
And ultimately, I hope many people gain a deeper understanding of coffee. Even if coffees share the same nationality, they have very different characteristics and tastes depending on the region they are produced. I hope people will say, "I like coffee from the Santa Felisa farm in the Acatenango region of Guatemala," rather than "I like Guatemalan coffee." Like wine.
