Noodles made with the traditional Kagawa Prefecture method

Introducing Sanuki Bussan's Shodoshima Tenobe Somen, made with 1st grade Hokkaido wheat flour. In Japan, the word 'koshi' is used to describe the elasticity or chewiness of noodles. Sanuki Bussan's somen, introduced here, also has a lively koshi. They break off smoothly yet chew springily and satisfyingly. The smooth surface also gives a pleasant mouthfeel. I recommend them to anyone looking for noodles that slide down smoothly.
