2 types of whole peeled tomatoes
As the name "whole peeled tomatoes" suggests, we're introducing an ingredient with whole, peeled tomatoes, preserving their pulp. This product is from Fratelli Longobardi, a company with high recognition and expertise, processing an impressive 1,200 tons of tomatoes daily. Due to their excellent quality and versatility, they are widely used in Italian restaurants in Korea. Plum tomatoes, shaped like Western plums, are blanched once, peeled, and then packaged. They are incredibly convenient as they can be used directly after opening the can, and the rich color and umami of plum tomatoes can easily elevate the quality of your cooking. Ingredients (Serves 2) 6 cherry tomatoes, 3 button mushrooms, 1/4 broccoli, 1/2 bell pepper, 1 onion, 4 slices bacon, 5 cloves garlic, 3 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 3 eggs, 2 sprigs basil, 20g Parmesan cheese, 1 baguette
・ Sauce Ingredients: 2 cups whole tomatoes (approx. 400g), 1/2 cup water (approx. 100mL), 2 tablespoons basil pesto
RECIPE 1. Halve the cherry tomatoes and cut the button mushrooms into quarters.
2. Cut the broccoli into bite-sized pieces, and the bell pepper and onion into 2cm wide strips.
Tip. Before preparing, soak the broccoli in cold water for 5 minutes, then in vinegar-diluted water for 10 minutes to remove impurities even from within the florets.
3. Slice the bacon into 2cm wide pieces and thinly slice the garlic.
4. Sauté the garlic and onion in a frying pan with olive oil.
5. Once the garlic and onion are golden brown, add the vegetables from ①-③, season with salt and pepper, and sauté.
6. In a bowl, mash and mix the sauce ingredients thoroughly, then add them to ⑤ and simmer over medium heat for 3 minutes.
7. When ⑥ starts to boil, reduce to low heat, cover, and simmer gently for 10 minutes.
8. Once ⑦ has thickened, add the eggs and cook until soft-boiled.
Tip. Adding the eggs as soft-fried eggs will result in a neater-looking Eggs in Hell.
9. Finish by sprinkling with basil leaves and Parmesan cheese, and serve with toasted baguette.
Tip. For a sweeter and saltier taste, add sugar to your liking.
