Organic Whole Peeled Tomatoes

Kurly’s RecipeBasil Tomato Eggs in Hell

Ingredients (Serves 2) 6 cherry tomatoes, 3 button mushrooms, 1/4 broccoli, 1/2 bell pepper, 1 onion, 4 slices bacon, 5 cloves garlic, 3 tbsp olive oil, 1 tsp salt, 1/2 tsp black pepper, 3 eggs, 2 sprigs basil, 20g Parmesan cheese, 1 baguette

・ Sauce Ingredients: 2 cups whole peeled tomatoes (approx. 400g), 1/2 cup water (approx. 100mL), 2 tbsp basil pesto

RECIPE 1. Halve the cherry tomatoes and quarter the button mushrooms.
2. Cut the broccoli into bite-sized pieces, and cut the bell pepper and onion into thick 2cm strips.
Tip. Before preparing, soak the broccoli in cold water for 5 minutes, then in water diluted with vinegar for 10 minutes to remove impurities from the florets.
3. Slice the bacon into 2cm strips and thinly slice the garlic.
4. Heat olive oil in a pan and sauté the garlic and onion.
5. When the garlic and onion from step ④ are golden brown, add the vegetables from steps ①-③, season with salt and pepper, and sauté.
6. In a bowl, mash and mix the sauce ingredients, then add to step ⑤ and simmer over medium heat for 3 minutes.
7. When step ⑥ starts to boil, reduce to low heat, cover, and simmer gently for 10 minutes.
8. When step ⑦ thickens, add the eggs and cook until soft-boiled.
Tip. To achieve a neater "Eggs in Hell" appearance, add the eggs when they are already cooked soft-boiled.
9. Finish by sprinkling with basil leaves and Parmesan cheese, and serve with toasted baguette.
Tip. If desired, add sugar to enjoy a sweeter and saltier flavor.

Tip. If you add pre-made soft-boiled eggs, you can achieve a neater-looking Eggs in Hell.
9. Finish by sprinkling with basil leaves and Parmesan cheese, and serve with toasted baguette.
Tip. For a sweeter and saltier flavor, you can add sugar to taste.
